Every coffee at Yellow Sun is roasted to highlight clarity, sweetness, and a clean finish.

We keep the roast consistent and use brewing to shape the final cup.

Use these as starting points — adjust to taste.

V60 (Pour Over)

THE KEY

WATER

Water is a key part of how coffee tastes, it controls what gets extracted from the coffee.

Two main minerals influence flavor:

  • Magnesium (Mg): enhances brighter, more vibrant notes like citrus and florals
  • Calcium (Ca): supports body, sweetness, and a rounder texture The balance between them shapes how the coffee feels in the cup.

Another important factor is alkalinity (KH), which acts as a buffer:

  • Too low → coffee can taste sharp or sour
  • Too high → coffee can taste flat and muted

Well-balanced water allows both acidity and sweetness to come through clearly, creating a clean and structured cup.

For best results, use clean, filtered water with moderate mineral content.
